Fermentation Meets Culinary Arts

This company was created by culinary arts chef instructor Darren Burke and fermentista Fran Wick. Fran and Darren share a passion for fermentation, gastronomy, healthy diets and a sustainable future. Both their experience in teaching and their complementary skill set mean that our students receive an excellent education that will have a true impact on their future professional careers.

About Darren

Initially trained in the UK, Chef Darren has worked for Sir Richard Branson in Kasbah Tamadot, Morocco, and in Verbier, Switzerland. He was the Chef Owner of Restaurant Le Bois Sauvage, focused on sustainable dining and local produce. He later went on to teach fine dining and plant-based cuisine at the Culinary Arts Academy Switzerland. He currently works as a chef instructor at Les Roches, one of the world’s leading hospitality schools.


About Fran

Fran is a certified food fermentation specialist who has taught over 600 students in the past three years. Through her Swiss company, Fermentista Academy, she runs workshops in Switzerland both for hobby cooks and professional chefs. She also created Switzerland’s first online course platform for fermentation knowledge where she gained her experience in the e-learning sector.

Fran successfully completed several fermentation trainings including Summer Bock’s Fermentationist TM Certification Program and the HarvardX Food Fermentation certification. She also studied the human gut microbiome and the effect of the gut microbes on human health. She is passionate about passing on her knowledge.
