Fermented Vegetables (Shockey)

What is it about?

Fermented Vegetables is my absolute favourite book when it comes to the lacto-fermentation of fruit and vegetables. It covers a huge range of vegetables (64 in total!) and fermentation techniques and lists recipes for creations from all around the world. You can really keep yourself busy with this book for years.

Who wrote it?

The book was written by Kirsten and Christopher Shockey, a couple from the US. They created more than 40 varieties of cultured vegetables and krauts to sell through their farmstand food company. Selling led to teaching, and they now host classes and workshops at their farm. Kirsten maintains their website at ferment.works. They live on a 40-acre hillside homestead in the Applegate Valley of southern Oregon.

Who is it for?

This book is great for beginners as the recipes are very clear and straightforward, the techniques are sound. The book is also amazing for those who already have gained experiences in lactic-acid fermentation, just due to the huge selection of recipes and inspiration.

Why do we like it?

We adore this book! We love the recipes, the easy to understand and clear instructions, all the tasty ideas for ferments, we love that almost every thinkable vegetable is covered in the book, often with several recipes, and we also love the design of the book, and the photos, it’s just a beautiful piece of work that is incredibly useful at the same time. Personally, I also love it because I spent four days with Kirsten in 2023 in the UK with the-peach.org and she’s just such a great person too, I really enjoyed getting to know her.
