Study at home on our own state-of-the-art e-learning platform. The pace is set by the participant – all webinars and instruction videos are pre-recorded for maximum flexibility. Only the live Zoom calls have a time and date, but these too are recorded in case you can’t attend them.

About Us

We are Darren, a culinary arts chef instructor and former restaurateur and Fran, a certified fermentista who’s been teaching fermentation for years. We share a passion for microbes, cooking, gastronomy, and sustainability. Our aim is to inspire and teach professional chefs around the globe in areas such as fermentation, reduction of food waste and other approaches to sustainability in gastronomy. Over six years of teaching experience combined with the use of various kinds of digital technology means that we’re able to provide an exceptional learning experience to our students.
